Shiitake mushrooms, pronounced shee-TAH-kay, are soft and suede-like and sometimes have a light amber to brown, but sometimes an almost black color. This extra small mushroom snack has an attractive umbrella shape with a characteristic curled edge. The cream-colored interior is described as smooth-firm and releases a delicious garlic-pine pungent aroma. The taste is wonderfully rich, earthy and smoky.

PREPARATION

Shiitake mushrooms fit everywhere. Toss in stir-fries. Add to soups. Sauces, stews, duxelles, gravies, stews and rice dishes are particularly fond of his friendly flavorful company. Saute and braise; sprinkle with favorite spices and fresh herbs. Enriched baked vegetables and stews. To clean, wipe gently with a damp paper towel or use a mushroom brush. Shiitake mushrooms can be kept for a week, but can lose their special smell and texture. For the best quality, use them on time.
