There is something magical about chanterelles. These chanterelle toasts are very simple, with lots of chanterelles and a little butter and cream. The trick is to bind the butter and cream until they form a cream sauce around the chanterelles. While the cream sauce is cooking, the chanterelles draw their delicious fruity aroma right into the cream.

STEP ONE: Start by frying the fresh chanterelles in a little butter for about 5 minutes. The mushrooms will wilt a bit, but they will still hold their shape as they begin to release their flavors. Add heavy cream and stir the mixture with a rubber spatula to coat the chanterelles evenly.
STEP TWO: Turn the heat to low and slowly cook the chanterelles in cream. It is important to cook them slowly so that the cream thickens, but does not curdle. Turn the stove all the way to low and be patient. Simmer the mixture gently for about 10 minutes, until the cream thickens. Salt to taste and garnish with your favorite crusty bread.
